
Well ok, it wasn't a party, just lunch.
A nice, refreshing lunch can do wonders on a heavy summer day. Today I came home from 5 hours of vectorial mechanics (that's right, I'm taking an inter-semestral course... what was I thinking?) to this lovely collection: fava bean salad, mushroom salad and cottage cheese coleslaw. They're so easy they don't really need quantities, so here you go:
Fava bean salad
Fava beans
Chopped tomato
Chopped, fresh onion
Cilantro
Drizzle lemon juice and olive oil
Mushroom salad
Large, coarsley chopped and cleaned mushrooms
For the dressing:
1 part plain natural yogurt
1 part light mayonnaise
Tarragon
Lemon juice
Dash soy sauce
Parsley
Cottage cheese coleslaw
Shredded cabbage
Cottage cheese
Bacon bits
Chopped nuts (optional)
Creamy dressing of your choice (Caeser is good)

These look wonderful...the perfect summer lunch! Vectorial mechanics, huh? Are you a physics person...my dad is and he would probably really love this class. On the other hand, you could be engineering, where my brother could join you! :-) Hope you have many more lovely "greetings" after that wonderful summer class.
Ah, I distinctly remember this day, salad lunch day.
...because I arrived home and there was nothing left except, like, 5 beans and a bit of onion. Oh, and an empty bottle of Caesar salad dressing on the counter.
Looks good, though, I hope you enjoyed them (actually, I bet you enjoyed them)
Claire- I'm a physics person, absolutely. Like your Dad, my Mom is a physics person too, she introduceed me to all her favorite books :).
Now, I've actually just finished my second semester at University, but I thought it would be a good idea to nail mechanics these vacations.
