My Mom pulled this out of somewhere for Mother's Day Lunch, only with about 6 or 7 mangos and avocados. She is awesome. And it's one of the best salads ever. See the pretty photo?
Mango avocado salad
For the dressing, mix:
1 tbsp. sherry vinegar
1 tbsp. low-sodium soy sauce
1/2 tsp. ground coriander
2 tbsp. cashews
1 tsp lemon juice
2 tbsp. orange juice
salt
Toss with:
1 avocado
1 mango
1/3 cup tomato, chopped (just flesh, no seeds or guts)
2 tbsp. cilantro, chopped
2 tbsp. fresh basil, chopped
Add:
3-4 cups salad greens
If you're not serving immediately, first mix the second bunch of ingredients with the orange and lemon juice and prepare the dressing with the rest of the ingredients. Just before serving add the dressing, then the greens.

Also, an uncle showed up with a surprise for us: there are called 'jumiles', and that's about all I know about them. Tasty, eh?
Oh, hang on, I just looked them up - they're a type of stink bug. Great. More info here. I think ours were dead, though.

The mango salad looks fabulous. I was salivating, then I read about the stinkbugs and was just plain curious.
renaedujour- I don't know if good is quite the word... they're satisfyingly crunchy, but the taste is really intense. Mostly just weird.
I like spiced crickets better :).
Hm, you forgot to mention the part when you ran away screaming after I showed you that bug that was going to have little baby stink buggies but never quite made it, due to its getting cooked and served and all.
...unless you forgot that on purpose.
